Rum, ginger and mango, oh my! This sweet and spicy cocktail makes a tasty accompaniment to those lovely Springtime afternoons and evenings spent cocktailing on the patio.

It’s officially patio weather here in Georgia, and I’ve had a hankering for some fun and fruity drinks to sip in the sunshine! And since Rum is my spirit of choice right now, I’ve been focused on making/creating Rum drinks to pair with our perfect Springtime weather.

I’m a big fan of Liber & Co.’s cocktail syrups, which I use quite regularly when making drinks. I really like that they not only make delicious syrups, but they also consistently create new recipes to use them in. Recently Liber & Co.’s “Cocktail of the Week” was one that mixed their fiery ginger syrup (one of my favorites) with Rum, so I used that recipe for inspiration and gave it a twist of my own!

Mangoes are one of my favorite tropical fruits, and with them coming into season now I’m more than ready to incorporate mangoes into my diet in any way that I can! And since they’re a natural companion for Rum, I thought I’d mix up something that highlights this yummy combo.

The result is a spicy, fruity, waaaaay too easy sipper! I made this over the weekend for a girls day with my mom and sister, and let’s just say that I’m already in need of a new bottle of Rum...

Rum, ginger and mango, oh my! This sweet and spicy cocktail makes a tasty accompaniment to those lovely Springtime afternoons and evenings spent cocktailing on the patio.

Yields:

1 Drink

Ingredients:

2 ½ oz White Rum

¾ oz Mango Nectar

½ oz Lime Juice

½ oz Fiery Ginger Syrup

2 dashes Angostura Bitters

1 oz Club Soda

Garnish: Lime Wheel

Instructions:

Combine all ingredients except for the club soda in a cocktail shaker and dry shake until combined. Pour into a glass filled with ice and top with club soda. Garnish with a lime wheel (or a mango slice if you don’t eat all of it before your drink is made!).
