Happy Saturday, friends! I don't know about you, but after a very busy week, I'm more than ready for a little down time and a couple of cocktails.

For your drinking pleasure this weekend, I bring you this beautiful twist on a Daiquiri by @theweekendmixologist. He describes it as "tropical, refreshing, sweet, sour, and a bit funky," and since I'm all about island living at the moment, this is sounding right up my alley. Particularly because of the addition of Amontillado Sherry, which balances the sweetness and complements the funkiness of the Jamaican Rum. Amontillado is a Sherry style that brings a bit of richness and nutiness to cocktails, and I dig it for the savory layer it adds to a drink.

Yields:

1 Drink

Ingredients:

2 oz Aged Jamaican Rum

¼ oz Amontillado Sherry

¾ oz Lime Juice

½ oz Raspberry Syrup

Pinch of Salt

Garnish: Lime Wheel

Instructions:

Combine all of the ingredients in a cocktail shaker and then add ice. Shake well and double strain into a coupe glass. Garnish with a lime wheel.
