Spring is quickly turning into Summer here in the South, which has me daydreaming of afternoons on the beach and sunsets by the water! I’m planning to spend most of the summer down on St. Simons, so I’m already testing out cocktails in anticipation of some summer fun with friends and family ahead.

When it comes to beach time cocktails, I want everything tropical! I rarely make or order such drinks otherwise, but when I’m at the beach all bets are off. Which is why the Royal Hawaiian was calling my name!

This cocktail was created in the 1920s at the luxurious Royal Hawaiian Hotel in Honolulu, Hawaii. It was originally called the Princess Kaiulani, but thanks to its popularity it was renamed after the hotel in the 1950s and became the hotel’s signature drink. (It has since been replaced by the Royal Hawaiian Mai Tai, but that’s a story for another day!)

The combination of Gin, lemon, and pineapple is a match made in heaven, with the addition of orgeat giving it that yummy island flair. It’s refreshing, super easy to make, and full of island vibes, so even if you can’t make it to the beach, this drink will mentally transport you there!

1 Drink

Ingredients:

2 oz Gin

1 oz Pineapple Juice

½ Lemon Juice

½ oz Orgeat

Instructions:

Combine all ingredients in a cocktail shaker filled with ice. Shake until cold and strain into a cocktail glass of your choice.
