Freshly picked key limes, a hint of maple syrup, and memories of my grandfather come together in this refreshing Bourbon and Ginger Beer cocktail.

I've had such fun doing a bit of cocktail testing with my key limes! Although I must admit, it takes a bit of elbow grease and patience to juice those little suckers.

Compared to Persian limes, key limes are a touch sweeter and a lot more aromatic, so I wanted to create a drink that really highlights the key lime flavor. And with the weather here in Georgia still warm yet hinting at a gorgeous Fall season ahead, I thought a cocktail suited for this transition period was the right way to go.

A touch of Summer, a touch of Fall, and a perfect accompaniment to either season, may I present to you “The Pa.” I named this after my grandfather “Pa” because he loved Bourbon and because I planted my key lime tree in his yard. He was a fanatic about caring for his lawn with the same passion and precision he exhibited as a Navy pilot, so I like to think it's his lingering energy that's to thank for my beautiful key lime bounty.

The Pa

Freshly picked key limes, a hint of maple syrup, and memories of my grandfather come together in this refreshing Bourbon and Ginger Beer cocktail.

Yields:

1 Drink

Ingredients:

2 ¼ oz Bourbon

¾ oz Fresh Key Lime Juice

½ oz Maple Syrup

1 Dash Angostura Bitters

1 oz Ginger Beer

Garnish: Key Lime Wheel

Instructions:

Combine all ingredients except for the Ginger Beer in a cocktail shaker filled with ice and shake until cold. Strain into a rocks glass filled with ice and top with the Ginger Beer. Garnish with a key lime wheel.

RECIPE NOTE: I prefer a tart cocktail to a sweet one, so adjust the maple syrup as necessary. And if you don't have access to key limes, no problem! Regular lime juice works just as well, but I suggest you reduce it to 0.5 oz to start since it tends to be a bit tarter.
