A Gimlet meets a Gin & Tonic in this refreshing and easy to make summer cocktail.

What do you drink when it's 95 degrees outside with nearly 100% humidity?

ENTER: The Skimlet.

Refreshing and SUPER easy to make, this quick cocktail is a cross between a Gimlet and a Gin and Tonic, but a "skinny" version of both. The tonic replaces the Gimlet's simple syrup and the Club Soda cuts the G&T's sweetness, so the result is an ultra light and fresh sipper that is THE perfect accompaniment for a hot summer day. But the best part is that it couldn't be any easier to make! Because let's be honest – when it's a million degrees outside and you're melting into a puddle, the quicker you can get a cocktail in hand to cool off, the better.

A big thanks to my friend, Anthony, for coming up with the name while we were actually melting into a puddle after a day spent on the beach!
