2 oz White Rum
¾ oz Lime Juice
¾ oz Simple Syrup
8-10 Blueberries
4-6 Mint Leaves
2 oz Club Soda
Garnish: Blueberries & a Mint Sprig
Add blueberries, mint leaves, lime juice and simple syrup to a cocktail shaker and muddle together until the berries are fully smashed. Add the Rum and shake together. Pour or strain into a glass filled with ice. (Some people like the bits of fruit and mint in their drink while others don’t, so this step is up to you.) Top with club soda and give a gentle stir. Garnish with blueberries and a mint sprig.
The amount of simple syrup you use depends on how sweet your blueberries are and how tart your limes are, so adjust this to taste. And remember: there are no rules when it comes to Mojitos, so have fun! Use a blueberry simple for a bit of extra blueberry oomph, or a mint simple if you prefer a mintier Mojito. Or throw some other herbs into the mix! I think basil tastes delicious in this.
