Festive and fun, this Blackberry Champagne Fizz makes the perfect accompaniment to Sunday Brunch, Happy Hour hangouts, and all things New Year’s Eve!
FOR THE COCKTAIL:
5-6 oz Sparkling Wine
¾ oz Blackberry Syrup
1 dash Angostura Bitters
Garnish: Blackberries and a sprig of rosemary
FOR THE SYRUP:
2 cups Fresh Blackberries
1 cup Sugar
1 cup Water
1 tablespoon Lemon Juice
FOR THE COCKTAIL:
Add the blackberry syrup to the bottom of a glass. Top with Champagne and bitters, give a gentle stir and garnish.
FOR THE SYRUP:
Combine the sugar and water in a saucepan over medium-high heat, stirring often until the sugar has dissolved. Add the blackberries and bring the mixture to a boil. Mash the berries to release all of their juices and simmer for 10-15 minutes. Remove from the heat and let sit for another 15 minutes. Strain the mixture through a fine mesh strainer and then stir in the lemon juice.
