Ingredients:

2 oz Rum

1 oz Pineapple Juice

1 oz Lime Juice

½ oz Simple Syrup

1 oz Club Soda

3-4 Pineapple Chunks

5-6 Mint Leaves

Garnish: Pineapple slice and mint leaves

Instructions:

  1. In the bottom of a cocktail shaker, gently muddle the mint leaves and pineapple chunks.
  2. Pour in the Rum, pineapple juice, lime juice, and simple syrup.
  3. Fill the shaker with ice, shake until cold, and strain into a Highball or Collins glass with ice.
  4. Top with club soda, stir gently, and garnish.

  • To make simple syrup, combine one part sugar with one part water in a saucepan. Heat over medium heat until the sugar dissolves, stirring occasionally. Let the syrup cool before using.
