Everything’s better with berries! And strawberry season is the perfect time to add some extra fruitiness to your tipples. Great for summer BBQs and outdoor entertaining, this Strawberry Ginger Cooler is one cocktail you’ll be sipping all season long!
2 ½ oz White Rum
1 oz Lemon Juice
½ oz Brown Sugar Syrup
2 dashes Angostura Bitters
2 Strawberries, sliced
1 oz Ginger Beer
Garnish: Strawberry
FOR THE COCKTAIL:
Add lemon juice, brown sugar syrup, bitters and strawberries to a cocktail shaker and muddle together until well combined. Add Rum and shake. Double strain into a glass filled with ice and top with the ginger beer. Give a gentle stir and garnish with a strawberry.
FOR THE BROWN SUGAR SYRUP:
Combine equal parts brown sugar and water in a small saucepan. Heat until sugar is dissolved, stirring occasionally. You can use either light or dark brown sugar, but I personally prefer dark because it offers a bit of richness that I enjoy in contrast to the freshness of the berries and lemon.
