This easy chicken salad recipe is made with rotisserie chicken, grapes, and pecans for the right mix of creamy, crunchy, and sweet. It’s not too heavy, full of flavor, and holds up well in the fridge for days.
Growing up in the South, chicken salad shows up everywhere. You find it at restaurants, baby showers, bridal showers, brunches, funerals, you name it. There’s always a version on the table, and everyone has their own idea of what makes it good. So as you can probably imagine, I’ve tried more than my fair share of chicken salad over the years. Some great, some forgettable, and plenty that were just a little too heavy or one-note.
One of the best chicken salad recipes I’ve ever had was at the Swan House in Atlanta, where my mom would take me as a little girl for special occasion lunches. They serve theirs in crispy little heart-shaped timbales (which felt incredibly fancy and very grown-up at the time!), and ever since then, it’s the one I compare all others to.
So years ago, I set out to recreate that Swan House version. And after a lot of testing, tweaking, and plenty of not-so-good batches, this is the easy chicken salad recipe I’ve come to rely on. It’s got the right mix of creaminess, texture, and freshness, and is exactly how I want chicken salad to taste.
What is Chicken Salad?
Chicken salad is a cold dish made with cooked chicken, a creamy dressing (usually mayonnaise), and a mix of crunchy, flavorful mix-ins like celery, herbs, fruit, and nuts.
One of the earliest recorded recipes for chicken salad showed up in Rhode Island in the 1860s at a place called Town Meats. The owner mixed leftover roasted chicken with mayo, tarragon, and grapes, then stuffed it into a roll. It started as a practical way to use up leftover chicken without making it obvious, but it caught on because you could serve it cold, it traveled easily, and it tasted just as good (if not better) the next day.
By the early 1900s, nearly every tearoom and country club in America had a version. Some made it sweet with fruit like grapes or apples, while others kept it savory with celery and onion. The Southern states claimed it as a staple, often with pecans and a heavier hand on the mayo, while delis made it chunkier and piled it onto rye.
No two versions are exactly the same, but the best chicken salad recipes follow a few simple rules: use good chicken, add a kick of acidity to the dressing, season it well, and mix in something fresh and crisp.
Basic Chicken Salad Formula
A good chicken salad recipe follows a simple structure: chicken + creamy base + crunch + acidity + seasoning.
All five elements matter, so adjust the ratios, not the components.
The Best Chicken for Chicken Salad
The foundation of any good chicken salad is, obviously, the chicken. But not all chicken works the same, and what you use can completely change the texture and flavor.
Some types of chicken give you soft, delicate pieces, while others add more structure or taste. There’s no single right answer, but understanding the differences makes it a lot easier to get the result you want.
Rotisserie vs. Poached vs. Roasted vs. Canned
Rotisserie chicken is the easiest option. It’s already seasoned, still moist, and easy to shred, which makes it ideal for chicken salad. It also has a mix of white and dark meat, which gives you better flavor overall.
Poached chicken is more neutral. It’s soft and tender and absorbs dressing well, but it can be a little bland if not seasoned properly. This is a good option if you want full control over flavor.
Roasted chicken sits somewhere in between. It has more flavor than poached chicken and a firmer texture. If you already have leftover roasted chicken, it’s a great way to use it up. Just make sure it’s not too dry, since no amount of dressing will fully fix that.
Canned chicken will technically work, but the texture is much softer and more uniform. It doesn’t have the same structure or taste as freshly cooked chicken, so it’s not my first choice unless you need something quick.
Why I Make My Chicken Salad with Rotisserie Chicken
When making this recipe, I almost always use a rotisserie chicken, and it’s not just because it’s convenient.
First, it already has flavor. Rotisserie chicken is seasoned and roasted, so you don’t have to work as hard to build flavor into the dressing because the chicken is already doing part of the job. (Especially the rotisserie chicken from Sam’s Club, which I highly recommend if you’re a member!)
The texture is another big reason. It’s tender without being too soft, and it shreds easily into pieces that hold onto the dressing without turning mushy. You also get a mix of sizes and textures, which makes the finished chicken salad feel more balanced.
It’s also the most consistent option. You know what you’re getting every time, and it takes out a lot of the guesswork since you’re not worrying about overcooking or under-seasoning.
And then there’s the efficiency. It saves time, cuts down on prep, and makes this recipe more doable without much planning. Instead of cooking and cooling chicken from scratch, you can go straight to assembling everything.
Plus, if you have any leftover rotisserie chicken from another meal, it’s a good way to make sure it doesn’t go to waste!
Rotisserie Chicken Salad Ingredients
Each of the ingredients in this classic chicken salad recipe is important, and if you skip one, you’ll taste the difference.
- CHICKEN: I’ve roasted my own chicken for this recipe, but found it didn’t make much difference flavor-wise. So rotisserie is my go-to because it’s just as good and much more efficient. Plus, it adds both flavor and moisture, especially when you use a mix of white and dark meat. (Note: one rotisserie chicken yields about 4 cups of shredded meat.)
- CELERY: This is your crunch. Cut it small so it distributes evenly. If the pieces are too big, every other bite is just celery. And use the inner stalks if you can because they’re more tender and less stringy.
- ONION: Yellow or red onion both work great and add a bite that helps cut through the dressing’s richness. If your onion is too strong, soak the diced pieces in cold water for about five minutes, then drain and pat dry.
- GRAPES: Fresh grapes add a pop of sweetness and contrast to the savory flavors in this shredded chicken salad recipe. Seedless red grapes are my favorite.
- PECANS: Toasted pecans add more crunch and flavor. Toast them in a dry skillet until fragrant before chopping.
- MAYONNAISE: This is the binder. Too much and it gets heavy, too little and it falls apart. I recommend using a thicker, full-fat mayo since lighter versions can make the salad a bit loose and weep in the fridge. If you go with light mayo, add a spoonful of Greek yogurt to help with the texture.
- DIJON MUSTARD: Adds a little sharpness in the background. You won’t taste it outright, but you’d notice if it were missing.
- LEMON JUICE: Provides the acidity you need to wake everything up. Without it, your chicken salad will taste flat. Use fresh lemon juice for the best flavor.
- FRESH HERBS: Add freshness and keep the overall flavor from feeling one-dimensional. I usually use parsley or dill. Parsley is clean and bright, while fresh dill is more aromatic. Tarragon is also a tasty choice for a more classic French flavor. Pick one or mix them. But don’t use dried herbs as they won’t give you the same result.
- GARLIC POWDER: Offers subtle flavor to the dressing, but isn’t overpowering.
- SALT AND BLACK PEPPER: Season in layers. Taste after mixing and adjust as needed. Rotisserie chicken is already seasoned, so go light at first.
This recipe for easy chicken salad makes about 4 cups, or 4–6 servings, depending on how you serve it.
Other Optional Add-Ins
Once you’ve got the basic recipe right, you can switch up the add-ins depending on what you like.
Chopped apples or dried cranberries are a great substitute for grapes, while walnuts or almonds can be used in place of pecans.
For a milder onion flavor, green onions or chives work well, and swapping in herbs like dill or tarragon will shift the flavor without changing the structure of the recipe.
And if you’re after more of a southern chicken salad, you can add capers, pickles, or a spoonful of relish for a briny contrast, and some chopped hard-boiled eggs to make it more substantial.

How to Make Chicken Salad (Step by Step)
Making this classic recipe is easy, but the steps matter if you want it to taste right. Here’s how to make chicken salad step by step.
Step 1: Shred the Chicken
Remove the skin from the rotisserie chicken, then pull the meat from the bones. Using your hands, shred the chicken into bite-sized pieces and transfer to a large bowl.
Aim for a mix of smaller shreds and slightly larger ones so the texture feels varied, not uniform.
Step 2: Prep the Vegetables and Add-Ins
Dice the onion as fine as possible. If it’s too strong, soak it in cold water for 5 minutes, then drain and pat dry.
Slice the celery thinly so you get crunch without large, bulky pieces.
Place the raw onions and celery on a paper towel and lightly sprinkle with salt. Let them sit for a few minutes, then pat dry. This helps draw out excess moisture and keeps the salad from becoming watery.
Halve or quarter the grapes, depending on their size.
Toast the pecans in a dry, non-stick skillet over medium heat until fragrant, then let cool and roughly chop.
Chop the parsley and set everything aside.
Step 3: Make the Chicken Salad Dressing
In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, garlic powder, and a pinch of salt and black pepper until smooth.
Give it a taste and adjust as needed. It should be slightly tangy, well-seasoned, and not overly heavy. Don’t skip this step because it’s harder to fix the seasoning once everything is combined.
Step 4: Add the Herbs and Vegetables
Add the prepared onion, celery, and parsley to the bowl with the chicken. Pour the dressing over the top and use a wooden spoon to mix it until everything is evenly coated.
Step 5: Fold in the Grapes
Add the grapes and gently fold them in so they stay intact and don’t get crushed. You want those little pockets of sweetness to hold their shape.
Taste and adjust the seasoning if needed.
Step 6: Chill
Cover and refrigerate for at least 30 minutes to 1 hour. This gives the flavors time to come together and improves the overall texture.
Step 7: Add the Pecans and Serve
Just before serving, stir in the chopped pecans so they stay crisp.
Give it one final taste and adjust the seasoning as necessary. Serve and garnish as desired.
Shredded vs. Chopped Chicken: Does It Matter?
Yes, it does.
Shredded chicken creates a softer texture and holds onto the dressing better, so the salad feels more cohesive.
Chopped chicken is firmer and more uniform, with more distinct pieces and less coating from the dressing.
For chicken salad, shredded chicken usually gives you a better balance of texture and flavor.
Tips for the Best Chicken Salad with Grapes and Pecans
To turn a good chicken salad into a great one, these are the details that matter:
- USE COLD CHICKEN: If the chicken is even slightly warm when you add the mayo, the fat can break, and the salad can turn greasy. Let it cool completely before you start.
- SALT THE VEGETABLES FIRST: Celery and onion hold a lot of water. Salting them briefly and patting them dry removes excess moisture so your chicken salad doesn’t turn watery as it sits.
- DON’T OVERDRESS IT: Add just enough dressing to coat everything. You can always mix in a little more later, but once it’s too heavy, there’s no easy fix.
- DON’T SKIP THE ACID: Lemon juice (or a splash of apple cider vinegar) is what keeps chicken salad from tasting like a mayo bomb. If it tastes flat, it usually needs more acidity, not more salt.
- ADD CRUNCH AT THE END: If you’re using nuts, stir them in right before serving. If they sit in the dressing, they’ll get soggy and lose their texture.
- TASTE AS YOU GO: Check the seasoning at each stage, not just at the end. Small adjustments early make a big difference in the end.
- LET IT REST BEFORE SERVING: Time in the fridge allows everything to settle and come together.
How to Keep Chicken Salad From Getting Watery
Watery chicken salad usually comes down to excess moisture. Salt and dry the vegetables, use fully cooled chicken, and don’t overdress it. Letting it chill before serving also helps the texture set.
What to Eat with Chicken Salad and How to Serve It
Homemade chicken salad can be served in all sorts of ways. You can enjoy it as a quick lunch or turn it into more of a main course:
- SERVE IT AS A MEAL: Make a chicken salad sandwich or wrap, tuck it into a croissant, or use lettuce wraps if you want something lighter.
- SCOOP IT UP WITH CRACKERS: Great for lunch or a snack and easy for serving a crowd.
- SERVE IT ON A BED OF LETTUCE: Pile it on top of greens for an entrée-style salad. I especially like it over butter lettuce or arugula with a bright lemon vinaigrette.
- MAKE IT A COMBO: Serve half of a chicken salad sandwich alongside a cup of vegetable or tomato soup or with a small green salad.
- PAIR IT WITH CLASSIC SIDES: Chips, a simple green salad, crudité, fruit salad, pickles, or pickled veggies all make great sides for chicken salad.
Or do like I usually do and eat it straight out of the container!
Variations
If you’re looking for more chicken salad ideas, here are a few ways to switch things up:
- SOUTHERN: Add chopped hard-boiled eggs and a spoonful of relish or finely chopped pickles for a more traditional version.
- CURRY: Add curry powder to the mayo and a handful of raisins or chopped apples for a slightly sweet and spiced version.
- MEDITERRANEAN: Skip the grapes and use lemon zest, chopped Kalamata olives, and sun-dried tomatoes. Swap the dill for fresh oregano and serve it in a pita with cucumber.
- ASIAN: Mix the mayo with a little sesame oil, then add sliced scallions, cilantro, shredded cabbage or carrots, and crushed peanuts.
- LIGHT: For a healthy chicken salad recipe, use poached chicken breasts instead of rotisserie chicken and swap part or all of the mayonnaise for nonfat Greek yogurt or mashed avocado. Add a little extra lemon juice to keep it balanced.
- PROTEIN SWAPS: This same recipe works with turkey, canned tuna, or even chickpeas if you want a non-chicken option. Poached shrimp is also tasty if you want to go coastal. Just make sure whatever protein you use is fully cooled and not watery.
- SEASONAL SWAPS: In spring, toss in some sliced radishes and swap the onion for ramps or green onions. In summer, add diced peaches and some cherry tomatoes. In fall, try roasted grapes or diced apples with a handful of dried cranberries. In winter, add pomegranate seeds for a pop of color and tartness.
How to Store Chicken Salad Properly
This traditional chicken salad recipe is a meal prep dream, but only if you store it right.
Keep it in an airtight container in the fridge for up to four days. The chicken will absorb more dressing as it sits, so it might look drier by day three. Stir in a spoonful of mayo or a squeeze of lemon juice to bring it back to life. And if you notice a little liquid at the bottom, just give it a quick stir.
For best results, store the pecans separately and add them just before serving so they stay crisp.
Chicken salad does not freeze well. The mayonnaise can separate once thawed, which affects the texture.
Frequently Asked Questions About This Recipe for Chicken Salad
There are always a few questions that come up when making this recipe, especially around storage, substitutions, and getting the texture right. Here are some of the most common ones.
Can I use rotisserie chicken for chicken salad?
Yes. Rotisserie chicken is one of the best options because it’s already seasoned, tender, and easy to shred. It also gives you a mix of white and dark meat, which adds more flavor and helps prevent it from drying out.
What is the best chicken to use for chicken salad?
The best chicken salad chicken is one that’s tender, well-seasoned, and not overcooked. Rotisserie chicken is the most reliable, but poached or roasted chicken also works.
What’s in chicken salad?
Traditional chicken salad recipes are made with cooked chicken, a creamy dressing (usually mayonnaise), and a mix of basic ingredients like celery, onion, herbs, fruit, or nuts. They also include something acidic, like lemon juice or vinegar, to cut through the fat.
Can you make chicken salad ahead of time?
Yes. Chicken salad is a great make-ahead dish and often tastes better after it’s had some time to chill. Just wait to add any nuts until right before serving so they stay crisp.
How long does chicken salad last in the refrigerator?
Chicken salad will keep in an airtight container in the refrigerator for up to four days. Give it a quick stir before serving, and refresh it with a little mayo or lemon juice if it starts to look dry.
Can you freeze chicken salad?
No. The mayonnaise tends to separate once thawed, which affects the texture and makes it less appealing.
What are some common mistakes to avoid when making chicken salad?
Using warm chicken, adding too much dressing, skipping the acid, or not seasoning enough are the most common issues. Each one can throw off the texture or flavor.
Is chicken salad healthy?
It depends on how it’s made. Chicken salad is a good source of protein, but traditional versions made with mayonnaise are higher in fat. You can lighten it up by using less mayo or swapping in Greek yogurt, and by adding more fresh ingredients like herbs and vegetables.
What are the main nutrients in chicken salad?
Chicken salad is high in protein from the chicken and contains fats from the mayonnaise or other ingredients. It can also provide vitamins and fiber depending on what’s added, like celery, herbs, fruit, or nuts.
Can you eat chicken salad while pregnant?
Yes, as long as it’s made with fully cooked chicken and properly stored. As with all creamy salads, avoid chicken salad that’s been sitting out at room temperature, and stick to freshly made or well-refrigerated versions to reduce the risk of foodborne illness.

-
1/2 tablespoon Dijon mustard
-
1/8 teaspoon garlic powder
-
1/8 cup onion, finely diced
-
3 ribs of celery, thinly sliced
-
1/4 cup fresh parsley, chopped
-
3/4 cup grapes, halved or quartered
-
1/2 cup pecans, toasted and chopped
-
Salt and pepper to taste
-
Garnish (optional): chopped parsley or chopped pecans
Instructions
-
Remove the skin from the rotisserie chicken, then pull the meat from the bones and hand-shred into bite-sized pieces. Transfer to a large bowl.
-
Finely dice the onion and thinly slice the celery. Place them on a paper towel, lightly sprinkle with salt, and let sit for a few minutes. Pat dry.
-
Chop the parsley.
-
Halve or quarter the grapes, depending on their size.
-
Toast the pecans in a dry skillet over medium heat for 3–5 minutes, stirring frequently, until fragrant and lightly browned. Watch them closely as nuts can go from toasted to burned quickly. Remove from the heat, let cool, then roughly chop.
-
In a small bowl, whisk together 3/4 cup mayonnaise, 2 tablespoons lemon juice, 1/2 tablespoon Dijon mustard, 1/8 teaspoon garlic powder, and a pinch of salt and black pepper until smooth. Taste and adjust seasoning as needed.
-
Add 1/8 cup finely diced onion, 3 ribs of thinly sliced celery, and 1/4 cup chopped parsley to the chicken. Pour the dressing over the top and gently fold to combine.
-
Add 3/4 cup of grapes and fold in gently to avoid crushing.
-
Cover and refrigerate for at least 30 minutes to 1 hour.
-
Just before serving, stir in the chopped pecans. Taste once more and adjust seasoning if needed. Serve as desired and garnish if using.
Notes
- If roasting or grilling your own chicken, you’ll want about 4 cups of cooked, shredded chicken.
- When it comes to herbs, I typically use parsley or dill for a fresh, clean flavor. Tarragon is another great option, but it’s more assertive, so use less. Start with 1–2 tablespoons chopped and adjust to taste.
- I use enough mayo to make my chicken salad creamy, but not so much that it’s drowning in it. You can adjust this to your liking.
- I also like a generous amount of celery for crunch. If you’re not a big fan, feel free to scale it back or leave it out.
- This chicken salad recipe makes about 4 cups and serves 4–6, depending on the portion size and how you’re serving it.
