Ingredients
- 5 cups grape tomatoes, sliced
- 1/2 cup olive oil
- 1 1/2 tablespoons red wine vinegar
- 2 medium lemons, juiced
- 1 shallot, thinly sliced
- 2 garlic cloves, thinly sliced
- 8-10 basil leaves, julienned
Instructions
- Slice the tomatoes in half and place them in a large bowl.
- In a separate bowl, whisk together the olive oil, red wine vinegar, and lemon juice. Season with salt and pepper to taste.
- Thinly slice the shallot and garlic and then stir them into the vinaigrette.
- Pour the vinaigrette over the tomatoes and gently toss to combine. Hold off on adding any more salt to avoid drawing out too much moisture.
- Cover and let sit at room temperature for at least 1 hour to allow the flavors to develop.
- After an hour, add the fresh basil. Transfer to an airtight container and refrigerate for 3 hours up to overnight.
- Before serving, bring the marinated tomatoes to room temperature. Season generously with salt and pepper to taste and give them a good stir.
Notes
- Feel free to use whatever tomatoes you want to use in this recipe! However, if you opt for larger, sliced tomatoes, reduce the marination time so that they don’t become mushy.
- Refrigerating your marinated tomatoes can cause the olive oil to congeal a little, but don’t worry! Returning them to room temperature will bring them right back to their juicy consistency.
