Description

Indulge in the taste of summertime with this peaches with feta and basil salad recipe. Perfect for a light meal or a delicious side, it’s the ultimate late summer salad you won’t want to miss.


Ingredients

  • 1 tablespoon olive oil
  • 2 teaspoons lime juice
  • 1/4 teaspoon agave
  • 1/16 teaspoon Dijon mustard
  • 3 large peaches, diced
  • 8 large basil leaves + a few for garnish, julienned
  • 1/2 cup feta cheese
  • Salt and pepper


Instructions

  1. Begin by dicing your peaches and placing them in a large bowl. If you don’t like the skin on peaches, peel them first.
  2. In a small bowl, whisk together the olive oil, lime juice, agave, and Dijon mustard. Season with a small pinch of salt and pepper.
  3. Pour the dressing into the bowl of peaches and mix together.
  4. Julienne the basil leaves making sure to set a few aside for later. Add the basil to the bowl of peaches.
  5. Stir to combine well then cover and let sit in the refrigerator for about an hour.
  6. Once the peaches have marinated for an hour, add the feta. Mix together and season with salt and pepper to taste.
  7. Slice up the rest of the basil leaves and sprinkle them over the dish. Serve immediately.
