Have you ever wondered how a grape finds its way from the vineyard into your wine glass?
The journey is a long and arduous one, and to fully appreciate the finished product, it’s important to understand the process of wine grape production from start to finish. So having already established the distinction between Old World and New World wine, it’s time to address the next crucial component in building a foundation of wine knowledge: what is viticulture?
Having had the privilege of working back-to-back vintages at a winery in New Zealand, I spent time working in the vineyards and learning about viticulture firsthand. The first vintage was an extremely challenging one, while the second vintage was one of the best Marlborough had experienced in over a decade. So between these two experiences, I had a front-row seat to the challenge of viticulture both in good times and bad, and gained a much deeper awareness of and appreciation for the vital role viticulture plays in winemaking.
While the subject of viticulture is a vast and deeply complex one that takes years of classroom studies and hands-on experience to fully understand, my goal for this article is to provide a high-level answer to the question “what is viticulture?” and to explain how it relates to the winemaking process.
What Is Viticulture In Wine Terms?
The term ‘viticulture’ specifically refers to the study, science, and cultivation of grapes. However, in the realm of wine, viticulture is more than just grape farming; it’s the foundation upon which the entire wine industry stands.
While grape variety determines the general flavor of a wine, how grapes are grown has the greatest impact on their character and quality. This involves a series of decisions and vineyard practices that directly influence a wine’s character, flavor, and potential for aging long before the grapes ever reach the cellar.
So at its core, viticulture is about nurturing vineyards and grapevines to ensure they thrive under any condition and produce the best possible fruit for winemaking.
What Is A Viticulturist and What Does a Viticulturist Do?
A viticulturist is an expert in viticulture responsible for the cultivation and care of grapevines from the moment they’re planted to the time they’re harvested. These grape growers work year-round to make calculated decisions that affect the fruit’s overall quality level and flavor profile.
The extremely demanding job of a viticulturist requires a strong understanding of horticulture, agriculture, and biology. However, this role isn’t limited to the vineyard. Viticulturists often collaborate with winemakers, sharing their expertise on grape quality and potential while also implementing vineyard practices to produce grapes that meet the winemaker’s desired standards of acidity, sugar, ripeness, and flavor.
Viticulturists are in essence the unsung heroes in wine. Though their work behind the scenes is often unseen by the average wine consumer, through careful vineyard management and an understanding of the complex interplay between grapes and their environment, viticulturists play a pivotal role in crafting wines that capture the unique character of a grape’s varietal and where it’s grown.
Why Is Viticulture So Important?
The care and precision applied in the vineyard determine the health and balance of the grapes at harvest. Thus, the axiom “good wine starts on the vine” underscores the integral role of viticulture in the wine production process.
This involves everything from selecting the right grape varieties for the local climate to analyzing soil composition to overseeing pest control and disease management to directing water management to choosing the right pruning techniques…the list goes on. Each one of these decisions is made with the end goal of harvesting the best quality grapes that embody the essence of their terroir.
Beyond this, however, responsible viticulture plays an important role in maintaining the health and sustainability of the wine-growing ecosystem. By adopting methods that respect the environment, viticulture contributes to the preservation of the land and the well-being of the communities around it.
What Is Terroir?
The French notion of terroir refers to everything in the natural environment that influences the development of a vine, from the macro to the micro. It includes factors such as soil, topography, climate, and the vineyard’s specific ecosystem, and can be as broad as the overall climate of a wine region to as specific as the type of soil that surrounds an individual vine.
The concept of terroir is central to the philosophy of winemaking, especially in regions where wines are classified by their geographic origin. Terroir is what imbues wine with a sense of place that makes it distinct, providing a sensory link to its origin. This explains why the exact same grape variety can produce wines that vary drastically in taste, color, and structure when cultivated in different parts of the world.
What is Viticulture: Key Factors
Viticulture is influenced by a myriad of factors that play a role in the journey from vine to bottle of wine. However, four key elements tend to have the greatest impact: climate, soil, vine management, and grape variety.
CLIMATE
Climate is arguably one of the most critical factors in viticulture. It affects every aspect of grape growing, from the basic ability of grape vines to thrive to the timing of the growing season to the nuances of grape ripening and flavor development and more.
Therefore, viticulturists must consider both the macroclimate of the wine region and the microclimate of individual vineyards. Cooler climates tend to produce grapes with higher acidity and lower sugar levels, ideal for sparkling and white wines, while warmer climates yield riper grapes, leading to fuller-bodied reds with higher alcohol content. Seasonal weather variations, such as frost, hail, and heatwaves, can also significantly impact the annual yield and quality of the grapes.
Too much or too little sun or rain can be detrimental to grape development, which is why vines thrive in areas with an average yearly temperature range of 50° to 68°F (10° to 20°C). For the ripening process, red grapes need warm days in the summer with average temperatures of around 70°F (21° C), while white grapes do best with average temperatures of about 66°F (19° C). This preference therefore limits grape cultivation primarily to the temperate zones in both the Northern and Southern Hemispheres that lie between 30° and 50° latitude.
Vineyards are also often planted near rivers or on steep slopes that optimally face the sun (south-facing in the Northern Hemisphere and north-facing in the Southern Hemisphere). This allows them to benefit not only from enhanced sun exposure but also from the heat generated by sunlight reflecting off the water.
Exceptions to the rule exist, however, with unique exposures and favorable weather conditions in specific regions allowing for viticulture in areas beyond these typical latitudinal zones. Not to mention the fact that climate change has already begun to redefine these limits.
SOIL
Soil type and soil quality play a pivotal role in viticulture, affecting water drainage, root health, and nutrient availability. Different soil types, from limestone and chalk to clay and loam, offer distinct advantages and challenges for grape growing. The pH and mineral content within each can also affect the vine’s growth and the grapes’ flavor profile, adding another layer of complexity to soil terroir.
Contrary to popular belief, grapevines actually flourish in less fertile soils where they must work harder to access water and nutrients. When forced to struggle, the resulting grapes tend to be richer in complexity and quality. In conditions where vines grow too easily and abundantly, the grapes are often simpler and more generic in quality.
This interaction between soil and vine roots deeply influences the minerality, acidity, and overall character of the grapes, which is vital for viticulturists to understand so that he or she employs best practices that lead to producing grapes in alignment with the type of wine style desired.
VINE MANAGEMENT
Effective vine management is essential for fruit development. This encompasses a range of practices and techniques employed by viticulturists to enhance vine health and productivity and to care for its overall root system. Some of the most vital aspects of vine management include:
- PRUNING AND TRAINING: Pruning helps control vine growth and grape yields while training shapes the plant’s structure to optimize fruit quality and exposure to sunlight. This aids in maximizing a vine’s performance under local climate conditions and keeps outgrowths of the vine from touching the ground and establishing new and unwanted roots.
- CANOPY MANAGEMENT: The vine’s canopy, or the leafy part of the vine, plays a critical role in the vine’s ability to photosynthesize and regulate grape growth and ripening. Whether a viticulturist employs leaf removal to provide grapes more exposure to the sun or lets the leaves grow to shield them from receiving too much, proper canopy management helps control grape ripening. This important process also aids in providing necessary air circulation to protect vines from pests and diseases, which is particularly important when making biodynamic and organic wine.
- SOIL AND WATER MANAGEMENT: Healthy soil and adequate water are fundamental for vineyards. This requires maintaining the right balance of nutrients and organic matter in the soil while carefully calibrating a vineyard’s needs so as not to give it too much water.
- DISEASE AND PEST MANAGEMENT: Keeping vines healthy also means protecting them from pests and diseases. While more and more viticulturists today are implementing sustainable, organic, and biodynamic viticulture practices to minimize or eliminate chemical inputs, targeted use of pesticides is sometimes used.
- HARVEST TIMING: Deciding on the right time for the harvesting of grapes is the culmination of a season’s worth of vine management. This critical decision is influenced by such things as weather patterns and the grapes’ sugar levels, acidity, and flavor development, all of which are shaped by Mother Nature and the preceding months of careful vineyard stewardship.
GRAPE VARIETY
The choice of grape variety is fundamental to viticulture as different wine grape cultivars have different characteristics and needs.
For example, some white wine grapes like Riesling excel in cooler climates where they can maintain their acidity, while other red wine grapes like Cabernet Sauvignon need warmth to help them develop their rich flavors and deep color. Some varieties like Pinot Noir are more sensitive to their soil environment, whereas others such as Grenache are more versatile and can adapt to a wider range of soil types.
Because varietals differ in their climatic preferences, resistance to diseases, ripening time and the like, their compatibility with the climate and soil of their viticulture region must align to achieve optimal expression. Moreover, each type of grape has unique aromas and flavors that set the foundational flavor profile of a wine, all of which are influenced by the terroir in which it’s grown.
For a variety of reasons, the interplay between these factors — climate, soil, vine management, and grape variety — defines the viticulture practice. A deep understanding of how these elements interact allows viticulturists and vineyard managers to make informed decisions that set the stage for the winemaking team to choose the best grapes and craft the best wines that express the fullest potential of their grape variety and terroir.
History of Viticulture
We can’t fully answer the question “what is viticulture?” without taking a look at where the practice actually began.
The roots of viticulture stretch back thousands of years to ancient times, with documentation of wild grapes growing as far back as the Neolithic period (10,000 to 2,200 BC). Archaeological evidence suggests that the domestication of vitis vinifera (or the common grape originating in Europe) began around 6,000 BC, with modern-day Georgia widely considered the birthplace of wine.
Viticulture then spread through the Mediterranean and Near East by ancient civilizations such as the Egyptians, Phoenicians, Greeks, and Romans. These early viticulturists developed the first practices of vineyard management, understanding the importance of terroir and varietal selection long before these concepts were formally defined.
The Middle Ages saw the monastic orders of Europe become the custodians of viticultural knowledge, meticulously tending to vineyards and refining winemaking techniques. This period solidified the relationship between specific grape varieties and their ideal growing conditions, an important principle of modern viticulture.
The Renaissance and subsequent centuries brought about a global expansion of grape production, with European explorers and colonists introducing grapevines to wine growing regions such as South Africa, Australia, Brazil, New Zealand, North America, and the United States. Despite challenges like the phylloxera plague in the late 19th century, which devastated wine regions across Europe and prompted innovations in grafting techniques, viticulture continued to evolve.
Today, viticulture faces challenges like climate change and sustainability concerns, but the spirit of innovation thrives. New technologies and environmentally responsible practices continue to emerge, which together with a deeper understanding of terroir persist in pushing the boundaries of wine quality and diversity.
What Are The Different Types Of Viticulture?
The viticulture world is not a one-size-fits-all practice. It encompasses a variety of approaches in the production of grapes, each tailored to specific philosophies, sustainability goals, and environmental conditions within viticulture areas. Some the main types of viticulture include:
- CONVENTIONAL VITICULTURE: utilizes established methods, technologies, and synthetic chemicals and fertilizers with a focus on maximizing efficiency and grape yield (which can sometimes raise concerns about its potential environmental impact)
- SUSTAINABLE VITICULTURE: balances environmental health, economic viability, and social responsibility, often integrating a combination of conventional, organic, and biodynamic practices
- ORGANIC VITICULTURE: avoids synthetic substances, focusing instead on organic fertilizers and natural pest controls to nurture vines, foster biodiversity, promote soil health, and minimize environmental impact
- BIODYNAMIC VITICULTURE: a holistic approach that treats the vineyard as a self-sustaining ecosystem, incorporating lunar cycles, cosmic rhythms, and specialized preparations to enhance soil and plant health
- NATURAL VITICULTURE: emphasizes minimal intervention, allowing nature to guide the growth of the vines and grapes as much as possible
- PRECISION VITICULTURE: still in its early stages, this technology-driven approach uses data analysis and tools like drones, sensors, and GPS to precisely monitor and manage individual vines or vineyard blocks with the goal of optimizing quality and efficiency
Viniculture vs Viticulture: Are Viniculture And Viticulture The Same?
The short answer is yes….and no!
Technically speaking, viniculture and viticulture both refer to the science, cultivation, and study of grapes. However, viticulture is the term used for all types of grapes (including fresh table grapes) while viniculture applies to growing grapes for wine.
That said, it’s important to note that in the wine industry the term “viniculture” extends far beyond this dictionary definition. You’ll often hear it used to reference the entire production of wine, otherwise known as the vinification process.
